A Perfect Pinch

I'm a huge fan of Mrs. Dash and McCormick Perfect Pinch  seasoning blends. They're my secret to quick and easy cooking, that's full of delicious flavor. Measuring individual spices is too tedious and time-consuming for me when, with just a few effortless shakes I can explore a variety of tastes from around the world. Cheers!

All Things Delicious

I just love all the great blogs I've been finding through Pinterest! Recently I came across the food blog All Things Delicious by a young stay-at-home mom. The recipes Hannah features on her blog are kid-friendly, as well as easy to prepare--just my style cooking! She provides helpful, step-by-step, photographed instructions for each recipe.

This weekend I tried two of her recipes:
Pizza Pasta
by Hannah, at All Things Delicious
Swiss Chicken

Yumm! I can't wait to try more . . .

Easy Green Beans

On Pinterest I come across scores of pictures of tantalizing culinary delights. But in this season of life that I'm in, juggling work and graduate school, I have zero motivation or energy to tackle gourmet dishes. Anything I do cook these days has to be quick and easy. . .

Last night for our New Year's Eve dinner I offered to make a side dish of green beans. I started with canned French-style cut green beans and stirred in some Italian dressing, Caesar dressing, and Parmesan cheese. Then I poured everything into a casserole dish, sprinkled French-fried onion rings on top, and set in the oven to bake. With a mere five minutes of prep (not including oven time), those beans were scrumptious. Score! =)

Easy-Peasy Potato Soup

The lovely Indian Summer weather we've been enjoying lately has finally blown away. It's windy and chilly in Midland now, definitely feeling like fall.

With cooler temperatures, hot soup was in order in our house today.  We had a bunch of potatoes in the fridge, so I thought I should make some potato soup. I chopped them up and set them to boil. But I didn't feel like searching for a recipe. And I certainly didn't feel like going grocery shopping for ingredients. Time to improvise! In our pantry I found a can of beef and vegetable soup, and I stirred it into the pot of boiled potatoes. Then I poured in some milk and shook in some blended seasonings. Voila! Easy-peasy potato soup. We ate it as a family for dinner tonight, topped with bacon crumbles and croutons. We all agreed it was as delicious to eat as it was easy to prepare. =)

Simple Veggie Bake

When life is busy, the last thing I feel like adding to my To-Do List is detailed menu planning, recipe searching, grocery-list making, and grocery shopping. That’s too much hassle just to put something home-cooked on the table for dinner. I find it’s way more convenient—and fun—to create dishes from ingredients already in the cupboard or fridge.

One of my latest “Kristina Creations,” as my family and I are apt to call my frequent culinary experiments, is a yummy veggie bake that I made from basic ingredients we had on hand. (I prepared the dish as one of the sides for a dinner for six.)

From the fridge, I grabbed . . .
  • three heads of broccoli
  • one red pepper
  • ½ an onion
  • the rest of the package of shredded cheddar cheese (about half of the package)

From the cupboard I opened . . .
  • a can of cream of chicken condensed soup
  • a new jar of medium salsa
  • a package of croutons

This simple veggie bake took only a few minutes to throw together. First, I chopped the veggies and tossed them into a casserole dish. Next I added the soup, a few scoopfuls of salsa, and the cheese and mixed everything together right in the casserole dish. Then I crushed the croutons and added them to the top, before baking in the oven at 375.

As a friend pointed out to me, cooking in this manner is also an easy way to save money. Learning from her, I’ve started making my grocery lists according to the sales and then designing menus accordingly, versus planning a menu first and then shopping for the necessary ingredients. Don’t you love it when something is convenient, economical, and delicious?
